Tan Tan Ramen Soup


Yield: 1 serving

Ingredients

  • 1 tsp vinegar
  • 2 tsp soy sauce
  • 3 tbsp Chinese sesame paste
  • 1/2 to 3 tsp la-yu chile oil *
  • 1 cup hot chicken bouillon (1 cup hot water plus 1 tsp chicken bouillon powder or a bit less than whole chicken soup seasoning packet that comes in a ramen package)
  • 2 tbs chopped green onions
* Adjust la-yu chile oil to your preferred level of spiciness. 1 tsp maybe a good start.

Directions

  1. In a ramen bowl, add ingredients in following sequence: vinegar, soy sauce, sesame paste, and la-yu chile oil. Mix well.
  2. Gradually add chicken bouillon to the ramen bowl, stirring continuously.
  3. Garnish green onion on top of ramen / udon

Tips & Variations

  • To make creamy version:  replace hot water with warmed soy milk or almond milk.
  • To make a larger serving size, use a pot for the soup, rather than individual bowls, and use whisk to mix.
