Skillet Seared Fish with Balsamic Vinegar Sauce


Yield: 2 servings

Ingredients

  • 2 fish fillets
  • 3 tbsp all-purpose flour (if the fish is not salmon or sea bass.)
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1/2 tsp balsamic vinegar
  • 1 tbsp white wine or Japanese sake
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp chopped green onion

Directions

  1. Dry surface of fish with paper towels. Sprinkle salt and black pepper over fish, coat fish surface with thin layer of flour. 
  2. Heat a skillet over medium-high heat. Add oil to pan and swirl to coat. Add fish to pan and cook 3 minutes on each side or until desired degree of doneness. 
  3. Remove fish from pan. 
  4. Add wine, soy sauce, vinegar and brown sugar to pan and cook for 1 minute or longer if needed to let the liquid thicken.
  5. Pour the sauce over the fish and garnish green onions on top.
