Yield: 4 buns
Ingredients
- 1 egg
- 125 g milk
- 15 g butter, chopped
- 1 tsp dry yeast
- 20 g brown sugar
- 3/4 tsp salt
- 200 g All-purpose flour
- 1/8 to 1/4 tsp olive oil
- 1 tsp raw sesame seeds (optional)
- 1/2 tsp water
Directions
- In a small bowl, beat egg.
- In a microwavable bowl, mix 30 g of beaten egg and milk, and microwave for 1 minute at power 7/10 for a 1200-watt microwave. Set the remainder of the egg aside.
- Add butter and stir to melt with a pair of chop sticks (or a whisk). If butter will not melt, microwave just enough to soften.
- Make sure if the liquid temperature is around 37 C (99 F). Add dry yeast and sugar and mix well. Let it sit for a minute.
- Dissolve salt, then add flour. Mix well with chop sticks.
- Mix to make a lump with a silicon spatula.
- Coat a baker's mat with flour and place the dough onto it. Divide the dough into fourths and round each piece of dough.
- Loosely place a plastic sheet on the dough to keep the dough moist. Leave it out for 10 minutes.
- Heat up the oven at the warm setting at 60 C for 5 minutes.
- Line the baking sheet with parchment paper.
- Punch the dough softly to let gas out, then round the dough and place onto the baking sheet.
- Spray water on the surface of dough and place the baking sheet in the pre-heated oven. Make sure the oven is about 40 C (104 F).
- Let the dough rise for 30 to 40 minutes, and doubling in volume. Check the temperature of the oven around 37 C (99 F), and heat up the oven at 50 C for 1 minute at a time if the temperature is too low.
- When the dough rises and double in volume, take out the baking sheet and start pre-heating the oven to 200 C (390 F).
- Add 1/2 tsp water and olive oil to the remaining beaten egg and mix.
- Gently apply the egg mixture to the surface of the dough thinly with a brush taking care not to disturb the surface of the dough. Sprinkle with sesame seeds.
- Place the baking sheet in the oven and reduce the temperature to 180 C, turning off the convection setting, and bake for 15 minutes.
