Yield: 12 rice balls?
Ingredients
- 2 1/4 cups short grain rice (3 Japanese rice cups)
- 4 tbsp or 1/4 cup soy sauce
- 1 tsp hondashi
- 2 cups water
Sauce
- 4 tbsp or 1/4 cup soy sauce
- 1 tbsp mirin
- 1 1/2 tbsp sesame oil
Directions
- Rinse rice until water become mostly clear. Soak rice in water (not listed) for 30 minutes (or 1 hour or so, if the room temperature is below 55 F.
- In a thick sauce pan, mix soy sauce, hondashi and water. Add drained rice.
- Place sauce pan on medium high heat until the mixture starts boiling. Cover and reduce the heat to low. Cook for 12 minutes, then set aside for another 12 minutes, leaving covered.
- Fluff the rice. Mix the sauce ingredients and pour into rice and mix taking care not to squash the rice grains.
- Divide the rice into 12 equal portions and make rice balls; place the rice on a plastic paper and wrap, squeezing into triangular shapes.
- Place the rice balls on an oven sheet and broil. Using a Breville oven, use the top rack and broil each side for 4 minutes.
