Ricotta or Cottage Cheese Pancakes+

Yield: 2 servings

Ingredients

  • 130 g (4.6 oz) ricotta or unsalted cottage cheese * -- 167 ml Bill Granger's recipe
  • 80 g (2.8 oz) or about 1/3 cup all-purpose or cake flour -- 125 ml Bill Granger's recipe
  • 2 eggs
  • 90 ml or 1/4 cup + 2 tbsp milk -- 95 ml Bill Granger's recipe
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Butter to coat Griddler / frying pan

Honey-butter (optional)

  • 2 tbsp (28 g) butter, at room temperature
  • 2 tbsp (42 g) honey

Directions

  1. Separate eggs into yolks and egg whites; place egg whites in a big clean, preferably metal bowl, and place yolks in a medium-sized bowl. Place the egg white bowl in the fridge.
  2. Shift together flour and baking powder. Set aside.
  3. Mix butter and honey. Set aside.
  4. Whisk yolks and milk, then add ricotta cheese. Mix ricotta cheese, taking care to leave some crumbs.
  5. Mix in flour, taking care not to mix too much, leaving some flour crumbs. Set aside.
  6. Preheat a frying pan or Griddler at medium low heat.
  7. Add salt to the egg whites and whip firmly (using a hand mixer is easier).
  8. Add 1/3 of whipped egg whites to the yolk bowl and mix. When they are mixed up mostly, add the rest of egg whites and mix.
  9. Coat the frying pan or Griddler surface with butter. Drop the pancake batter using a spoon and cook about 2 minutes or until the bottom becomes brown and the batter starts bubbling. Flip pancakes and cook another 2 minutes. Serve hot with honey-butter.

I sometimes make cottage cheese myself by adding 1/4 cup of lemon juice to a pint of milk at 140 F (60C). Stir, then leave it for few minutes, and drain. Do not add salt to substitute ricotta cheese. The drained liquid can be used as a substitute for milk.

400 ml milk and 5 tsp lemon juice may make the amount of cottage cheese required for this recipe.

Using Instant Pot's pasteurize function (under the Yogurt function), you can bring up the milk to  a good temperature, as well as pasteurizing the milk, and the cottage cheese will last longer.
