Bacon Okra Butter Soy Sauce Spaghetti



Yield: 2 servings (25% less than normal serving per person)

Ingredients
  • 6 okra
  • 3 slices or 2 oz. (60 g) bacon, chopped in a half-inch wide slices
  • 1/2 tomato, diced to 3/4 inch
  • 1 1/2 tbsp olive oil
  • 1 clove garlic, chopped
  • 1 tsp red pepper powder
  • 1 tbsp (14 g) butter
  • 1 1/2 tbsp soy sauce
  • 1 dash salt
  • 150 g or 2 servings spaghetti noodles
  • salt to clean okra
  • salt to boil spaghetti
Directions
  1. Scrub okra with salt and rinse. 
  2. Slice the okra in diagonal in 3/4 inch widths, discarding the stem end.
  3. Boil the spaghetti in boiling water containing 2 tsp. salt per litter, for 1 less minute than the duration listen on the package.
  4. In a large skillet, add olive oil, garlic and red pepper. Heat to low medium until the garlic turns fragrant.
  5. Add okra, bacon, tomato to the skillet.
  6. When cooked, drain the hot water from the spaghetti, saving 1/3 cup of cooking water.
  7. Bring the skillet heat to medium-high and add butter and soy sauce, stirring for 5 seconds, then add spaghetti, stirring continuously.
  8. Add the saved hot water to the skillet, add a dash of salt, cook until most hot water is gone.
  9. Serve immediately.
