Strawberry Frozen Yogurt


Yield: 4 Servings

Ingredients

  • 650 g unsweetened yogurt
  • 120 - 130g granulated sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 200 g fresh strawberries or frozen strawberries
  • 1 tbsp or 21 g honey
  • 2 tsp lemon juice

Directions

  1. Strain the yogurt for 2 to 3 hours in refrigerator. Refer tips for more details.
  2. Place strawberries and sugar together in a covered bowl and microwave for 1 to 3 minutes at 1200 W (high power on most larger microwaves). Be aware not to allow it explode, it can make a huge mess... watch the last 30 seconds of cooking time. Using a tall container may help prevent messes!
  3. Using immersion blender or regular blender, make strawberry puree, adding honey. Let it cool down to about 104 F (40 C).
  4. Mix strained yogurt and remaining ingredients with the strawberry puree using an immersion blender.
  5. Chill the yogurt mixture in a refrigerator for few hours.
  6. Using an ice cream maker, make a frozen yogurt. Usually takes about 15 minutes.
Note
To avoid using white sugar, use 110 g honey
