Ingredients
- 2 (6-ounce) boneless pork chops
- Salt and black pepper
- 30 g yellow onion, chopped roughly
- 1 tbsp mirin
- 1.5 tbsp sake
- 2 tsp soy sauce
- 1/8 tsp garlic powder
Directions
- Set the Sous Vide cooker to 140ºF (60ºC).
- Generously season the pork chops with salt and pepper. Place in a large zip lock or vacuum seal bag. Seal the bag, purging air. Place bag in the water bath and set the timer for 1 hour.
- In a microwavable tall, narrow container, add yellow onion and microwave for 30 seconds at 1200 W (?).
- Add mirin, sake, soy sauce and garlic powder to onion. Microwave for 20 seconds at 1200 W (?).
- Using an immersion blender, liquify the onion mixture.
- Place a skillet on medium-high to high heat. Just as the oil just begins to smoke, add the pork chops and sear until golden brown, about 1 minute per side.
- Reduce the heat to low and add onion sauce to reduce (thicken) the sauce.
