Pao de Queijo or Brazilian Cheese Bread

Yield: 4 servings

Oven temperature and cooking time

  •  350 F (175C), convection, for 23 minutes at Breville Smart Oven 

Ingredients

  • 1/2 cup (126 g) milk
  • 1/4 cup (18 g) canola oil
  • 1/2 tsp salt
  • 140 g tapioca flour
  • 4 tbsp (24 g) powdered parmesan cheese
  • 4 tbsp (28 g) grated cheddar cheese
  • 1 egg

Directions

  1. Heat milk, canola oil and salt in a medium sized pan just until before the mixture is boiling.
  2. Add tapioca flour and mix or kneed well . The dough will become resilient. 
  3. Mix in cheeses.
  4. Preheat the oven.
  5. When the dough cools down to less than 140 F (60C), add egg to a opened space in the pot and immediately whisk the egg there. Mix in the egg to the dough to be well cooperated.
  6. Make 12 bolls of the dough and align them on a baking sheet spacing out about 2 inches (5 cm).
  7. Bake just until before they turn brown.

Note
  • They do not  usually taste as good next day. 
  • Reheat in oven if there are leftovers.
